Well, my first day of mindful (vegan) eating went well. For breakfast, I chose Van’s Organic Homestyle (non-dairy) waffles, which I found to be good, although a bit drier in consistency than an Ego. I will definitely eat these again.
About mid-morning, I became aware of the urge for something sweet, and thoroughly enjoyed eating some pineapple chunks.
Lunch consisted of a Food For Life “Cluckphrey” Vegan Patty and a large salad. Love the name of the patty! I enjoyed this particular one over others that I’ve tried in the past, as I found it to be more tasty and visually appealing. Next time I think I’ll try one of these on a whole wheat bun with lettuce, tomatoes and onion. After eating, I still had the urge for something sweet, so I took a handful of grapes, and after eating just a few, I recognized that I wasn’t really hungry anymore, so I stopped eating. Good job, Claire!
About mid afternoon, I began to have an urge for something to eat, so off to the kitchen I went.. At this point, my kitchen is not well-stocked with vegan selections, and my eyes fell upon a Snicker’s bar that my husband left behind! I could feel my automatic pilot engaging, as my hand began reaching for it! I picked it up, and at that point I recognized that my cravings were taking over my behavior. Who’s in charge here…..a thought…….or me? Once I got back in the moment and stopped thinking about how good that candy would taste (future thought), I put it down and went in search of a better choice. I decided to take a handful of Garden of Eatin’ Blue (all natural) Tortilla Chips, and enjoyed eating them slowly and deliberately.
Before I went off to an evening commitment, I decided to have a bowl of Honey Sunshine Kashi Cereal with some Blue Diamond Almond Breeze Milk. I swear I could live on cereal. It was satisfying and filling, and I enjoyed the almond milk so much better than the soy milk I’ve tried in the past.
An instructor of mine advised me to try drinking half my body weight in water throughout the day, in order to stay adequately hydrated, but today I think I only got in about half that amount. I’ll have to give my water drinking more attention.
I also made a decision to start using my pedometer once again, to try to get in about 10,000 steps per day. I put it on at about 2 PM, and went out for a short walk. By the end of the day, I had walked about 3000 steps.
I think I’m off to a good start, and I feel like I’m making good choices moment by moment, without mindless thinking taking over. After all, I won the battle of the candy bar!
